Recipe Ingredients for Roasted Root Vegetables

1/2 cup parsnips, cut up
1 cup carrots, cut up
1/2 cup beetroot, cut up
2 cups sweet potato, cut up
2 cups white potatoes, cut up
1 tbsp olive oil
1/2 tbsp dried thyme
2 tsp sea salt
2 tsp ground pepper

Recipe Directions for Roasted Root Vegetables

  1. Cut vegetables into 1/2 inch pieces.

  2. Toss with olive oil.

  3. Season with thyme, salt and pepper.

  4. Bake at 400*F for 30-45 minutes.
