Great easy nutritious side dish. Roasting brings out the sweetness of the vegetables.

Recipe Ingredients for roasted root vegetables

2 cups carrots
1 cup parsnips
1 1/2 cups beets
1 tablespoon canola oil
1/2 teaspoons salt
1 teaspoon rosemary
1/2 teaspoon garlic powder
1/2 teaspoon pepper

Recipe Directions for roasted root vegetables

  1. cut all vegetables into 1 inch cubes.

  2. drizzle with oil and seasonings.

  3. mix well

  4. bake in a 400degree oven on a baking sheet 45 minutes or until tender.

  5. You can also put them in with whatever else you may be baking such as a roast or casserole and just adjust the cooking time to the temerature you are using.
