carrots, parsnip and turnip (can also add beet)

Recipe Ingredients for roasted root vegetables

2 cups brussel sprouts
1 cups carrots
1/2 cup parsnips
1 cup brocolli
1 sweet potato
1 onion
5 tbsp olive oil
1 salt
1 pepper
2 tbsp parsley
1 tsp rosemary

Recipe Directions for roasted root vegetables

  1. preheat oven to 400 degrees F. Peel and cut the vegetables into equal size pieces. Toss vegetables and onions in olive oil in a large bowl and season generously with salt and pepper.

  2. Spread the pieces out in a single layer on one or two roasting trays so that the vegetables don't touchh. Roast until the veggies are lightly browned and just tender, 45 min to 1 hour. Remove and toss with additional olive oil. Season with salt and pepper and garnish with parsley before serving.
