Roasted read potatoes and veggies

Recipe Ingredients for Roasted red potatoes and veggies

1 cup chopped red potatoes
4 baby carrots
1/2 c sliced red pepper
1/2 c sliced green pepper
1/4 c sliced onion
2 cloves garlic
1/4 c Chopped Brocolli
1 tbs Olive Oil
1/4 tsp Salt
1/4 tsp Pepper
1/2 tsp italian seasoning

Recipe Directions for Roasted red potatoes and veggies

  1. heat oven to 425

  2. put cleaned and cut veggies/potatoes in bowl

  3. add oil and spices

  4. stir

  5. spread veggie mixture evenly on baking sheet

  6. bake at 425 for 25 minutes

  7. turn and bake an additional 10-15 minutes until potatoes are soft
