Recipe Ingredients for Roasted Red Potatoes

9 red potatoes
1 red bell pepper
1/4 c. light olive oil
1 t. salt
1 t. ground black pepper

Recipe Directions for Roasted Red Potatoes

  1. Preheat oven to 400 F.

  2. Wash and slice potatoes in half.

  3. Wash and slice or chop red pepper.

  4. Mix olive oil, salt, and ground pepper in a bowl.

  5. Toss potatoes and red pepper in oil mixture.

  6. Lay on baking pan with the cut side down, and bake for 45 minutes - do not turn.
