Recipe Ingredients for Roasted Red Pepper & Yogurt Soup

1 3/4 lbs red bell pepper
1 1/4 lbs yellow bell pepper
2 cups nonfat plain yogurt
1 cup chicken stock
1 tbsp fresh chervil, chopped
1 tbsp fresh tarragon, chopped
1 tbsp fresh basil, chopped
1/2 tsp salt
1 tsp white pepper
1 tbsp balsamic vinegar

Recipe Directions for Roasted Red Pepper & Yogurt Soup

  1. Use aluminum foil to cover a cookie sheet. Place the whole peppers on the foil and roast in a very hot oven or under the broiler, until the skins are well blackened. Turn the peppers frequently! When they are done, put the peppers in a bowl to cool.

  2. Once cooled, place in a colander over a large bowl. Peel the peppers: save the flesh in the colander and allow any juices to drip into the bowl. Discard stems, blackened skins, and seeds.

  3. Transfer peppers and the juices to a food processor with a steel blade. Puree until smooth, then strain through a sieve.

  4. Return the strained mixture to the processor, and add the yogurt, chicken stock, chopped herbs, salt, pepper, and vinegar. Process until well blended. Chill.

  5. Serve very cold, poured over shrimp or scallops if desired. Cucumbers are also nice!

  6. Garnish with extra pepper pieces (juliennes), yogurt, and herbs, if desired.
