Recipe Ingredients for Roasted Red Pepper & Tomato Soup

4 cups diced tomatoes
6 red peppers, peeled
2 cups milk, 1%
1 tsp butter
1 tsp garlic
1 tsp basil leaves
1 tsp parsley flakes
1 tsp oregano
1/4 tsp black pepper

Recipe Directions for Roasted Red Pepper & Tomato Soup

  1. Roast sliced red peppers in butter.

  2. Put tomatoes in a medium-large pot and add red peppers.

  3. Using a hand wand type mixer or a food processor blend until smooth.

  4. Add all other ingredients.

  5. Simmer until ready to serve (at least 30 min.).
