Roasted Red Pepper and Tomato Gazpacho

Recipe Ingredients for Roasted Red Pepper and Tomato Gazpacho

1 cup chopped raw Vidalia Onion
2 clove Garlic
2 tbsp Olive Oil
12 oz Roasted Red Peppers
16 oz Diced Tomatoes
0.17 oz Coriander Powder
1/2 tsp Paprika
1 tbsp Balsamic Vinegar

Recipe Directions for Roasted Red Pepper and Tomato Gazpacho

  1. 1. Microwave onions and garlic in oil for 2-3 minutes.

  2. 2. Stir in coriander and smoked paprika for 1 minute.

  3. 3. Add tomatoes, peppers and 1 cup water.

  4. 4. Puree in blender w/balsamic vinegar and salt and pepper.

  5. 5. Chill overnight, adjust seasoning, and serve.
