Very flavourful and hearty soup, very quick and easy to make.

Recipe Ingredients for Roasted Red Pepper,Tomato & Eggplant Soup

6 medium tomatoes, 3 red bell peppers chopped, 1/2 small onion, 1 medium eggplant, 8 cloves garlic, 1 litre vegetable broth, 1 litre wate

Recipe Directions for Roasted Red Pepper,Tomato & Eggplant Soup

Cut tomatoes in 1/2 , core and seed peppers, cut in about 2" chunks, 1/4 the eggplant lengthwize, then slice along the length about every inch, remove cloves of garlic from bulb removing skin. Arrange everything on baking sheets. Drizzle with canola oil. Salt and pepper. put into preheated oven 400deg. for about 1 hour or until pepper skins just start to blacken on edges. In large pot saute 1/2 onion chopped until translucent. Then add can tomatoes. add veg cube, veg. broth, and water, bring to a gentle boil. Add roasted veggies, bring back to the boil, reduce heat using emursion blender on low speed blend well until there are no large pieces of veg. Add some dried italian herbs and more salt and pepper to taste. Enjoy!
