Roasted Red Pepper Soup with Seared Scallops

Recipe Ingredients for Roasted Red Pepper Soup with Seared Scallops

2 1/4 pounds red bell peppers
3 tbsp olive oil
2 garlic cloves
1 onion
1 tsp cumin
1/4 tsp red pepper
32 ounces low sodium chicken broth
1/2 cups orange juice
1/4 tsp orange zest
8 sea scallops

Recipe Directions for Roasted Red Pepper Soup with Seared Scallops

  1. Preheat the oven to 425. Put the

  2. peppers on a cookie sheet, stemmed

  3. side down, and bake for 45 minutes, or

  4. until the skins are black. When they're

  5. cool enough to handle, remove and

  6. discard the skins, cores and seeds.

  7. Finely dice 2 of the peppers.

  8. In a large saucepan, heat 2

  9. tablespoons of the olive oil. Add the

  10. garlic, onion, cumin and crushed red

  11. pepper and cook over moderately low

  12. heat, stirring occasionally, until the

  13. onion is softened, about 10 minutes.

  14. Add the whole roasted peppers and the

  15. chicken broth and bring to a boil over

  16. high heat. Reduce the heat to low and

  17. simmer for 20 minutes. Add the orange

  18. juice, orange zest and cilantro.

  19. In a blender, puree the soup in

  20. batches. Return the soup to the

  21. saucepan and season with salt and

  22. pepper; keep hot.

  23. In a medium skillet, heat the remaining

  24. 1 tablespoon of olive oil until

  25. shimmering. Season the scallops with

  26. salt and pepper. Add the scallops to

  27. the skillet and cook over high heat until

  28. richly browned on the bottom, about 2 minutes. Turn the scallops and cook on

  29. the second side for 1 minute. Ladle the

  30. soup into bowls, garnish with the

  31. scallops and diced peppers and serve.
