Recipe Ingredients for Roasted Red Pepper Soup

1 serving roasted red peppers (12oz jar) (orlando greco)
1 potato, peeled, diced
1 carrot, peeled, diced
1 onion, peeled, diced
2 cloves garlic, whole
14 oz chicken broth, fat free
1/2 cup water
1 tsp salt

Recipe Directions for Roasted Red Pepper Soup

Boil chicken broth and water in a large pot. Mix in potato, carrot, onion and garlic, and cook on med-low until vegetables are breaking apart. approx. 15-30 minutes. Puree vegetables using a hand blender or food mill. Add roasted peppers (do not drain) and puree again until mixture is creamy. Can be served hot or cold
