Creamy, tomato-based roasted red pepper soup

Recipe Ingredients for Roasted Red Pepper Soup

8 piece Roasted Red Peppers, Jarred
28 oz Diced Tomatoes
1 cup (8 fl oz) Soup, Chicken Broth
0.25 large Onions
1 stalk, medium (7-1/2" - 8" long) Celery
1 serving Carrot
1 clove Garlic
1 cup, fluid (yields 2 cups whipped) Cream, Fluid, Heavy Whipping
3 oz Mexican Style Four Cheese

Recipe Directions for Roasted Red Pepper Soup

  1. Dice onion, carrot and celery and mince garlic

  2. Sautee the cut vegetables until tender

  3. Add chicken broth, simmer

  4. Roughly cut up roasted red peppers, add these and tomatoes and simmer.

  5. Pour all into blender or food processor and blend until creamy.

  6. Add heavy cream and blend until mixed.

  7. Serve with cheese sprinkled on.
