1 medium raw Sweet Potato
2 medium raw Carrots
2 tbsp Extra Virgin Olive Oil
1 medium (2-1/2" dia) Onions
4 serving Chicken 33% Less Sodium Broth Rtsb

Recipe Directions for Roasted Red Pepper Soup

Roast red pepper. Cool and peel. Saute other vegetables in olive oil. Add broth. Add peppers. Cook until vegetables soft. Puree in a blender.
