Recipe Ingredients for Roasted Red Pepper Soup

2 medium raw Sweet Potato
3 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
32 oz Light
3 clove Garlic
1 medium (2-1/2" dia) Onions
1 oz Extra Virgin Olive Oil
0.5 tsp Spices Crushed Red Peppers
0.5 tsp, ground Basil, Dried
1/2 tsp Spices Oregano Leaves
0.25 tsp Parsley, Dried
2 tsp Salt, Table
2 tsp Pepper, Black

Recipe Directions for Roasted Red Pepper Soup

Preheat oven to 425 F. Chop pepper, onion, potatoes, and garlic. Mix with all ingredients (except chicken broth) in large bowl. Spread on a baking sheet lined with foil and bake in preheated over for 45 to 60 minutes. Remove for over once veggies cooked and allow to cool. Blend veggies with chicken broth in batches and transfer to large pot. Bring pot to a boil and then lower heat and simmer for 5 to 10 minutes.
