Roasted red pepper sauce for pasta.

Recipe Ingredients for Roasted Red Pepper Sauce

2 1/2 cup, strips Peppers, Sweet, Red
1 cup, chopped Onions
30 grams Extra Virgin Olive Oil
12 fl oz Organic Low Sodium Chicken Broth
1/4 cup leaves, whole Basil, Fresh
3 oz Parmesan Cheese
6 tbsp Whipped Cream

Recipe Directions for Roasted Red Pepper Sauce

  1. Roast 2 red peppers over flame until charred all over.

  2. Place them in a sealed plastic bag for 30 minutes to steam.

  3. Cook onions in olive oil ove medium heat until soft and slightly carmelized.

  4. Peel, deseed and slice peppers.

  5. Place peppers, onions broth and salt and pepper to taste in blender. Cover and blend until smooth.

  6. Return sauce to pan and add cream, parmesan and 2 T. of chopped basil. Heat gently to melt cheese.

  7. Serve over pasta with 2 T. chopped basil on top.
