Recipe Ingredients for Roasted Red Pepper Salsa

2 red peppers, halved and flattened
2 tomatoes, finely chopped
4 green chili peppers, seeds removed and chopped
2 cloves garlic, crushed
4 tablespoons lime juice
4 tablespoons olive oil
2 tablespoons coriander, freshly chopped

Recipe Directions for Roasted Red Pepper Salsa

  1. Preheat a grill to 'High'. Place the red peppers, skin side up on the grill tray and cook until the skins are charred and blackened in patches. Pop the peppers in a plastic bag and leave for 10 minutes. Peel of the skins and chop the flesh

  2. Add the chopped peppers to the rest of the ingredients and refrigerate for at least 2 hours before serving.
