Recipe Ingredients for Roasted Red Pepper & Lentil Soup

1 cup green split peas
3/4 cup green lentils
3/4 cup red lentils
2 tbsp vegetable oil
1 yellow onion, diced
4 garlic cloves, minced
1 tsp sea salt
1 tsp cumin
2 tsp coriander, ground
1 tsp paprika, smoked
1/4 tsp turmeric
2 carrots, diced
8 cups water
2 sweet red peppers, raw

Recipe Directions for Roasted Red Pepper & Lentil Soup

  1. Combine peas and lentils in a bowl and soak with water for an hour.

  2. Meanwhile, heat oil in pot and fry onion until soft.

  3. Add garlic, saute 5 minutes.

  4. Stir in spices, adding water to prevent sticking. Add carrots and cook until soft.

  5. Rinse lentils and peas. Add to pot, along with 6 cups of water (or homemade veggie stock). Boil, partially cover for 30 minutes.

  6. Whiz with a hand blender.

  7. Roast red peppers, cut into piece and add to soup. Whiz with hand blender. Serve drizzled with lemon juice and/or fresh coriander.
