Recipe Ingredients for Roasted Red Pepper Hummus

2 tbs roasted red pepper
1 tbs olive oil
1 1/2 tsp minced garlic
15 oz garbanzo beans, drained and rinsed
2 tbs lemon juice
1 tbs tahini
1 tbs water
1/2 tsp cumin
1/2 tsp salt
1/2 tsp paprika
1 tbs parsley

Recipe Directions for Roasted Red Pepper Hummus

  1. Combine garlic, beans, lemon juice, olive oil, tahini, water, cumin, salt, paprika, and process for 1 to 2 minutes in a food processor til completely smooth. Scrape sides with a rubber spatula and add red pepper and parsley. Process 1 to 2 more minutes or until completely smooth.

  2. Transfer to a medium bowl. Serve with raw veggies or pita breads. Serve hummus in an airtight container in the refrigerator for up to 1 week or in the freezer for 6 months.
