Recipe Ingredients for Roasted Red Pepper Hummus

15 oz chickpeas
1 red bell pepper
3 cloves garlic
1/4 cup lemon juice (fresh)
1/4 cup tahini
1/4 tsp salt
1/4 tsp pepper
1/4 tsp onion powder
1/4 tsp paprika
1/4 tsp apple cider vinegar
1 tbsp olive oil

Recipe Directions for Roasted Red Pepper Hummus

  1. Cut off the top and bottom of the bell pepper. Rub on some olive oil, put it on a baking sheet, and put in the oven at 400 F, on the top rack, for 5-10 minutes. Once it is done, let it cool completely, then peel off the skin. Set aside.

  2. Mix together the tahini and lemon juice until creamy; a whisk helps at this step. If it is still thick, add some oil, about 1/2 tsp at a time. Add to food processor.

  3. Add garlic and process well. Add chickpeas a handful at a time until they are mixed in. Then add oil until creamy.

  4. Add in salt, pepper, and onion powder and continue processing. Then add the red pepper and the splash of apple cider vinegar. Continue processing until smooth and creamy.

  5. Add hummus to container and chill for a few hours or overnight.
