Delicious and super simple. A crowd-pleaser for sure - even my guests who normally arent fans of hummus *love* this recipe.

Recipe Ingredients for Roasted Red Pepper Hummus

1 red bell pepper
1/2 onion, yellow sweet
4 cloves garlic
1 tbsp tahini
4 tbsp olive oil
18 oz chickpeas
1/2 tsp white pepper
1/4 tsp sea salt

Recipe Directions for Roasted Red Pepper Hummus

  1. Preheat your oven to broil.

  2. Cut the bell pepper in half, de-seed it, and stuff it with onion and a couple of garlic cloves. Spray each half with olive oil all over so it's coated well. Sprinkle a bit of sea salt on each.

  3. Broil the stuffed bell peppers for 5 to 10 mins, or until the skin is spotty & brown and the flesh is tender.

  4. After the bell peppers cool, grab each half and empty the onions, garlic, and excess oil and juices that have gathered inside into a food processor. Peel each half and put the flesh in the food processor as well.

  5. Add the tahini, olive oil, white pepper and salt, and blend for several minutes.

  6. Slowly add the chickpeas bit by bit until the entire mixture is blended & smooth. Add more olive oil if necessary. The texture should be rather thick, smooth with no chunks, and less soupy than a lot of hummus you may have had before.
