Recipe Ingredients for roasted red pepper eggplant dip

1 small red bell pepper
1 small yellow bell pepper
1 small orange bell pepper
5 cloves garlic
1 eggplant
1 1/2 tsp olive oil
2 tbsp tomato paste

Recipe Directions for roasted red pepper eggplant dip

Coat veggies with olive oil, sprinkle with salt, roast at 400 degree for 20 minutes, remove eggplant peel, roast some more to dry out liquid. Blend with salt, pepper, and tomato paste.
