Recipe Ingredients for Roasted Red Pepper - Chipotle Salsa

2 chipotle peppers
2 cloves garlic
2 tablespoon pine nuts
2 teaspoons honey
2 red peppers
3 tablespoons red wine vinegar
3 tablespoons cilantro
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

Recipe Directions for Roasted Red Pepper - Chipotle Salsa

  1. Stem the chipotles and coarsely chop.

  2. Grill the red peppers. Stem, remove seeds, and coarsle chop.

  3. In a blender, combine garlic, pine nuts, chipotles, red peppers and honey. Blend until smooth.

  4. Pour mixture into a medium bowl and stir in vinegar, cilantro, salt and pepper.

  5. Cover and let sit at least 30 minutes at room temperature before serving.
