A tangy bisque that is very healthy and fairly simple.

Recipe Ingredients for Roasted Red Pepper Buttermilk Bisque

4 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium (2-1/2" dia) Onions
10 medium Carrots, Baby
1 tbsp Olive Oil, Extra Virgin
2 cup (8 fl oz) Water
1 tbsp, ground Basil, Dried
1 tsp Oregano, Ground
1 tsp, leaves Thyme, Dried
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
1 cup Fromage Blanc Fresh Cheese
2 tsp Cayenne
1 tsp Cloves, Ground
1 tsp Cinnamon, Ground
1 cup Milk, Nonfat, Fluid
1 tbsp Pepper, Black
3/4 cup, cubes Turnips
5 clove Garlic
1 tsp Salt, Table

Recipe Directions for Roasted Red Pepper Buttermilk Bisque

  1. Chop peppers into medium siced pieces and roast, plain, at 300 until black at the edges and very soft.

  2. In a large pot, sautee onion (sliced/diced) and carrots (sliced like coins) in olive oil until onions are transparent and carrots are soft. Stir frequently.

  3. Add garlic (minced/sliced) and sautee until garlic browns slightly. Stir frequently.

  4. Add water, turnips, tomatoes, all spices and bring to a boil.

  5. Stir in nonfat milk, and bring to a boil, stirring frequently.

  6. Puree mixture in food process until creamed.

  7. Return to pot, and bring to a boil adding cheese and buttermilk.

  8. Puree entire mixture in food processor again until thick and creamy.
