a lower fat alternative to a traditional alfredo sauce- makes a great side dish for chicken.

Recipe Ingredients for Roasted Red Pepper and Asparagus Alfredo

3 cups whole wheat spaghetti
2 tsp butter
1/2 cup skim milk
1/4 cup Philadelphia cream cheese, whipped
1/4 cup roasted red peppers
1 T. pesto
1 oz. parmesan cheese, shredded
10 oz. asparagus, snapped into 1 inch pieces

Recipe Directions for Roasted Red Pepper and Asparagus Alfredo

Put butter in pan on medium heat and melt. Add skim milk and bring to simmer. Add cream cheese, roasted red peppers and pesto. Turn to low and simmer until slightly reduced. Add parmesan cheese. Add cooked spaghetti and cooked asparagus. Stir and serve.
