Roasted Red Peppers, Chickpeas, and almonds with fresh parsley blended to make hummus.

Recipe Ingredients for Roasted Red Pepper and Almond Hummus

1/2 cup raw almonds
2 tbsp red wine vinegar
2 tbsp olive oil
19 oz chickpeas
1/2 cup roasted red peppers
2 cloves garlic
1/2 tsp salt
3 tsp water
1/4 cup fresh parsley

Recipe Directions for Roasted Red Pepper and Almond Hummus

  1. In a food processor, add 1/2 cup almonds and pulse until very fine.

  2. Add vinegar, oil, chickpeas, roasted red peppers, garlic, salt and pepper. Puree until smooth, gradually adding water as desired to thin dip and scraping down sides of bowl several times.

  3. Once smooth, add parsley and puree briefly to lightly incorporated ingredients.
