Nutty quinoa and almond meal pasta with freshly roasted red bell pepper puree.

Recipe Ingredients for Roasted Red Bell Pepper Pasta

2 cup, strips Peppers, Sweet, Red
1 cup Organic Quinoa Flour
0.5 cup Almond Meal/Flour
3 cup Semolina Pasta Flour
4 medium Egg, Whole
1 tbsp Extra Virgin Coconut Oil
0.5 tsp Salt, Table

Recipe Directions for Roasted Red Bell Pepper Pasta

  1. Roast 2 red bell peppers on a cookie sheet for 1 hour and 15 minutes at 350 degrees.

  2. Let cool, peel and seed peppers. Puree peppers in a food processor and add to remaining ingredients.

  3. Mix with dough paddle, on low speed for two minutes. Knead dough by hand for five minutes more. Let rest for 20 minutes.

  4. Separate and prepare noodles in pasta attachment.
