From Moosewood Simple Suppers, p. 50. The recipe calls for an eggplant, for which we've substituted tofu.

Recipe Ingredients for Roasted Ratatouille

2 zucchinis
3 onions
2 tomatoes
2 bell peppers
6 garlic cloves
1/3 cup olive oil
1 tsp salt
1/2 tsp black pepper
16 oz extra firm tofu
1 cup fresh basil leaves, chopped

Recipe Directions for Roasted Ratatouille

  1. Preheat the oven to 450 F.

  2. Cut all of the vegetables into 1-in chunks and place them in a large bowl. You need between 12-14 cups total. Coarsely chop the garlic. Toss the vegetables and garlic with the olive oil, salt, and pepper, and spread on a baking sheet or two. Roast for 15 minutes and then stir the vegetables. Continue to roast for 25-30 minutes, stirring again after 20 minutes, until the vegetables are fork tender and juice.

  3. While the vegetables roast, chop the basil. When the vegetables are done, put them in a serving bowl and stir in the chopped basil. Pass grated cheese at the table, and serve over bread.
