Recipe Ingredients for Roasted Ratatouille

1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium Squash, Summer, Zucchini, Includes Skin
1 medium raw Onion Yellow
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1/2 tbsp Olive Oil, Extra Virgin
1 tbsp Rosemary, Fresh
1 tsp Sea Salt
1 tsp Pepper, Black
1 tsp raw Garlic

Recipe Directions for Roasted Ratatouille

  1. Cut up vegetables, and add everything except for tomatoes into a baking pan.

  2. Toss with olive oil and seasonings and roast for 40 minutes at 350.

  3. Add in tomatoes and roast until done (about 30 minutes)
