Recipe Ingredients for Roasted Quinoa with Potatoes and Cheese

3/4 c quinoa
1 lb potatoes, cut into wedges
4 tbsp garlic
2 tbsp extra virgin olive oil
3 oz cheddar cheese, grated
1 medium red bell pepper
1 hot pepper

Recipe Directions for Roasted Quinoa with Potatoes and Cheese

  1. Preheat oven to 400 and grease a roasting pan with 1 tbsp oil.

  2. Boil the potato wedges and garlic cloves in salted water to cover.

  3. When boiling, add the quinoa and cook at a rolling boil for 5 minutes.

  4. Lightly strain, add to roasting pan, tossing. Spread out potatoes and cook, undisturbed, for 15 minutes.

  5. Shake up potatoes, cook 10 minutes more, or until tender instead and crusty outside.

  6. Add salt, peppers, and cheese, cook until cheese melts.
