Recipe Ingredients for Roasted potatos

1 pound red potato
4 tbsp olive oil
1/8 tsp salt
1/8 tsp pepper
1/8 cup shallots
3 cloves garlic
1/2 cup parsley

Recipe Directions for Roasted potatos

  1. PreHeat Oven to 425

  2. Cut your potatos into bite size pieces and bring them to a boil. Let them boil for about 6 to 8 mins and then drain them.

  3. In your food processor, pulse together parsley, shallots, and garlic till finley minced and blended together.

  4. In a large bowl mix the potatos and olive oil together. Once that is mixed together, add in the parsley mixture until potatoes are coated.

  5. Spread on parchment paper or a greased cookie sheet and bake for 40 minutes or until light browning occures.
