Recipe Ingredients for Roasted potatoes and squash

1 large Squash, Summer, Zucchini, Includes Skin
8 oz Yukon Gold Potatoes
2 tbsp Extra Virgin Olive Oil
1 clove Garlic

Recipe Directions for Roasted potatoes and squash

  1. Mince the garlic

  2. Halve the potatoes

  3. Quarter the zucchini or squash (cut in half then cut in half length wise)

  4. Combine all the ingredients and spread them over a pan

  5. Roast at 375 for 25-35 minutes

  6. Check every 10 minutes or so to turn
