Oven roasted potatoes with mushrooms and sweet red peppers

Recipe Ingredients for Roasted Potatoes

5 potato small (1-3/4" to 2-1/2" dia) Potatoes, Baked, Flesh And Skin
1.5 cup pieces Mushrooms
1 small Onions
1/2 cup, chopped Peppers, Sweet, Red
2 1tsp Olive Oil

Recipe Directions for Roasted Potatoes

  1. Wash and cube about 5 small to medium red potatoes

  2. slice one half to one onion

  3. clean and cut about 1 1/2 cups of mushrooms

  4. dice sweet red peppers

  5. toss with about 2 tbsp of olive oil and pepper to taste. I also added a dash of ceyenne pepper.
