Simple roasted potatoes, you could cut calories by using spray instead of evoo

Recipe Ingredients for Roasted Potatoes

2 pounds potatoes, scrubbed and cut to 3/4 inch wedges
2 tbsp olive oil
1/2 tsp salt
1/8 tsp black pepper, freshly ground

Recipe Directions for Roasted Potatoes

  1. Preheat oven to 425 and position rack in center. Toss potatoes in oil, season to taste with salt and pepper, and toss again to combine.

  2. Place potatoes cut side down in shallow roasting pan. Cover tightly with aluminum foil and bake for 20 minutes.

  3. Remove foil and roast until cut side is crusty golden brown, about 15 minutes more.

  4. Remove pan from oven and turn potatoes carefully (with metal spatula)

  5. Return pan to oven and roast until the side now facing the pan is crusty golden brown and skins have raisin-like wrinkles, 5 to 10 minutes more. Transfer to serving dish and enjoy!
