Use any kind of potato you like, although the new potatoes are best

Recipe Ingredients for Roasted Potatoes

1 lb yukon gold potatoes
2 T olive oil
1/2 t sea salt
1/4 t pepper
2 T chives, chopped
3 cloves garlic, chopped

Recipe Directions for Roasted Potatoes

  1. Preheat oven to 425 degrees.

  2. Cut potatoes into 1" dice and place in a large bowl.

  3. Top with all remaining ingredients and stir to coat.

  4. Pour onto a cookie sheet and bake until golden and crunchy, about 30 minutes.
