A good alternative to mashed potatoes. Each spray of Pam is about 5 calories, and none of the spices a re more than 3 calories for 1/2 teaspoon, so this can be varied for some different flavors.

Recipe Ingredients for roasted potatoes

1 large potato, diced
3 sprays cooking spray, olive oil Pam
1/2 teaspoon pepper
1/2 teaspoon tarragon
1/2 teaspoon salt
1/2 teaspoon paprika

Recipe Directions for roasted potatoes

  1. Spray an 8 x 8 glass oven dish with one spray of olive oil Pam.

  2. Add all other ingredients, toss to spread the spices evenly.

  3. Bake at 350 degrees about 25 to 30 minutes, to desired crispiness.
