Roasted Potatoes With Gorgonzola and Walnuts

Recipe Ingredients for Roasted Potatoes With Gorgonzola and Walnuts

1 pound red potatoes, halved
1 1/2 tsp olive oil
1/4 tsp ground black pepper
1/8 tsp salt
1/2 cup walnuts, chopped coarsely
2 ounces crumbled Gorgonzola
2 scallions, thinly sliced

Recipe Directions for Roasted Potatoes With Gorgonzola and Walnuts

  1. Preheat oven to 425 degrees, Coat a 9x9 baking dish with cooking spray. In a zip lock bag place potatoes, oil salt & pepper. Coat well. Place potatoes on baking dish cut side down. Roast 30 - 35 minutes, or until very tender and lightly golden on underside.

  2. Put walnuts in baking pan or skillet and toast for 6 - 8 minutes. Tip into bowl and let cool. Add gorganzola cheese and scallions and crumble with fingers.

  3. Turn potatoes over and sprinkle evenly with walnut mixture. Bake 5 more minutes, or until cheese is melted.
