Easy side dish. Goes great with blackened tilapia.

Recipe Ingredients for Roasted Potatoes with Broccoli

4 russet potatoes, skin on/washed/chopped into 1 inch cubes
1 cup chopped broccoli
1 tbsp. salt
1 tbsp. pepper
1 tbsp. garlic powder
1 tsp. paprika
1 tsp. basil
1 Cooking Spray, 100% Olive Oil

Recipe Directions for Roasted Potatoes with Broccoli

  1. Preheat oven to 425 degrees.

  2. Place 13x9 pan into oven for 5 minutes.

  3. Remove pan from oven. Spray with cooking spray.

  4. Add potatoes and broccoli. Sprinkle all of the seasoning onto them. Toss with tongs.

  5. Spray the vegetables with cooking spray.

  6. Cover with foil and cook in oven for about 20 to 30 minutes.

  7. Uncover, toss, and place back in oven for another 5 minutes turning the heat to 475 degrees.
