Recipe Ingredients for Roasted Potatoes with Baby Arugula

1 lb Whole New Potatoes
2 tbsp olive oil
1 salt and pepper
2 cups baby arugula
1 tbsp 100% Lemon Juice

Recipe Directions for Roasted Potatoes with Baby Arugula

  1. Heat oven to 450F. (using same temp as in the salmon recipe.) On a rimmed baking sheet, toss the potatoes, 1 Tbsp oil, and 1/4 tsp each salt and pepper. Roast until golden brown and tender, 20 to 25 minutes.

  2. Transfer the potatoes to a bowl and toss with the arugula, lemon juice, remaining Tbsp oil and 1/4 tsp each salt and pepper.
