Recipe Ingredients for roasted potato scramble

3 tbls Olive Oil
1 Salt, Pepper
2 tbls rosemary
12 red potatoes
2 red peppers
1/2 yellow onion
7 eggs
3 cups spinach
4 cups cheese

Recipe Directions for roasted potato scramble

  1. drizzle potatoes w/ olive oil, season with salt, pepper and rosemary. Roast in a 375 degree oven for 30 minutes. Add chopped onion & red peppers. Continue roasting until done.

  2. While potatoes are roasting sauted the spinach, scramble the eggs. Layer ingredients w/ spinach on the bottom, eggs, cheese, then potato mix and top with cheese. Put in the oven for another 10 minutes to melt the cheese.

  3. You can add other veggies that you like and use low fat cheese. It's still just as yummy.
