Recipe Ingredients for Roasted Potato Salad

6 tablespoons extra virgin olive oil
5 cloves garlic
2 lbs red potatoes
1 tablespoon fresh thyme
1 tablespoon fresh rosemary
2 tablespoons champagne vinegar
1 tablespoon dijon mustard
1/4 cup shallots
1 Salt
1 Pepper

Recipe Directions for Roasted Potato Salad

  1. Cut potatoes into bite size pieces

  2. Toss potatoes with olive oil, salt, pepper, thyme and rosemary

  3. Bake at 375 until tender

  4. Wisk together vinegar, mustard and shallots

  5. Toss with potatoes

  6. Serve warm or cold
