Recipe Ingredients for Roasted Potato on Greens

12 tiny new potatoes, red-skinned
1/2 tsp sea salt or seasoned salt
1/4 tsp paprika
4 cups broccoli florets and stems,
12 cups romaine, torn in bite-sized pieces
1 cup red cabbage, finely sliced or shredded
1 tsp pepper, to taste
2 cloves garlic
1/2 cup fresh lemon juice or lime
1 1/2 tsp sea salt
1/4 cup sunflower seeds
1/4 cup raw cashews
1 tsp dried oregano
1 tsp dried thyme
1/4 tsp freshly ground black pepper

Recipe Directions for Roasted Potato on Greens

  1. Place potatoes whole and unpeeled in a vegetable steamer, covered, over boiling water for 20 minutes or until almost tender. While potatoes are steaming, prepare broccoli, greens, and dressing. Remove from heat and cut into -inch cubes (peeling is optional). Place in large bowl and set aside. Melt butter in small saucepan.

  2. Place potatoes in one layer on cookie sheet. Place at highest shelf position in preheated broiler. Broil for 5-10 minutes.

  3. While potatoes are broiling, steam broccoli whole for 5-7 minutes or until just tender and bright green. Remove from heat immediately, and set aside to cool.

  4. Place lettuce in large bowl.

  5. Add cabbage. Cut broccoli lengthwise into thin slivers (unless prepared thus before steaming). Add to greens. Remove potatoes from broiler. Add to salad. Season with pepper, if desired.

  6. Mix the dressing ingredients in a blender and toss well with salad.
