Roasted Potato and Green Bean Salad

Recipe Ingredients for Roasted Potato & Green Bean Salad

1 1/2 pounds red potatoes, cut into quarters
2 tbsp olive oil
1/2 pound green beans, cut into 1 inch pieces
1 T balsamic vinegar
1 T dijon mustard
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Roasted Potato & Green Bean Salad

  1. Toss potatoes with oil and salt and pepper. Roast in an oven for 45 minutes at 375.

  2. Bring a medium saucepan of water to a boil and add green beans. Cook until slightly tender, about 5 minutes. Drain and rinse with cold water.

  3. In a large bowl, whish together vinegar, mustard. Add potatoes and beans and toss to coat.
