Good when you don't have a lot of other veggies in the house. Especially good with some white bean aioli.

Recipe Ingredients for Roasted potato, carrot & onion

2 tbsp olive oil
1 potato, sliced into bite-sized pieces
2 medium carrots, sliced into bite-sized pieces
1/4 onion, sliced into bite-sized pieces
1 tbsp parsley
2 tsp sage, ground
2 tsp rosemary, crushed
2 tsp thyme, ground

Recipe Directions for Roasted potato, carrot & onion

  1. Preheat oven to 450.

  2. Slice all of the vegetables and put into baking pan.

  3. Drizzle olive oil over vegetables.

  4. Sprinkle herbs over vegetables.

  5. Toss vegetables to coat evenly.

  6. Bake for 25 minutes, then broil for 5 more.
