From Veganomicon. if using for a sandwich, really good to add herbs like oregano, thyme and basil to the marinade. You are actually supposed to have double the liquid but for nutritional calculation purposes, I cut them in half for the recipe.

Recipe Ingredients for Roasted Portobellos

1/4 cup cooking wine
1/2 tbsp olive oil
1 tbsp soy sauce
1 tbsp balsamic vinegar
2 cloves garlic, minced
2 large mushrooms

Recipe Directions for Roasted Portobellos

  1. Combine all ingredients for the marinade in a glass pie plate or small casserole. Place mushrooms upside down in the marinade and spoon a lot of the marinade into each cap to form a small pool. Preheat oven to 400F and marinate for about 20 min.

  2. Cover with aluminum foil and bake for 30 min. Remove the foil, use tongs to flip the caps over and cook, uncovered for another 10 min. If you're using your portobello as a burger, just put on the buns and eat! If using for a salad, allow it to cool a bit, then slice mushrooms very thinly on the diagonal to make nice meaty slices.
