Oven roasted pork tenderloin with slow roasted potatoes with herbs

Recipe Ingredients for Roasted Pork with Herbed Potatoes

2 lbs pork tenderloin
1 tbsp olive oil
1 tsp dried parsley
1 tsp dried marjoram
1 tsp salt
1 tsp pepper
1 tsp garlic powder
8 medium potatoes, skinless

Recipe Directions for Roasted Pork with Herbed Potatoes

  1. Trim any visible fat off pork tenderloin and put in a large freezer bag with the olive 1.5 tbps of olive oil. Shake in bag to coat loin.

  2. Add .5 tsps of each herb, salt, pepper, and garlic powder to bag to coat pork loin.

  3. Brown porkloin in pan on medium high on all sides, about 2-3 minutes a side)

  4. Transfer browned pork loin to 13x9 baking dish. Peel and cut potatoes in 1/2" slices. Put in baking dish with pork and drizzle remaining .5 tsp on the potatoes. Use remaining herbs, garlic, salt and pepper to season potatoes.

  5. Cook at 400 for 40-50 minutes.
