A pineapple basted in a honey rum syrup.

Recipe Ingredients for Roasted Pineapple

1 1/2 lb. Fresh Pineapple
2/3 c. honey
1/4 c. Rum
1/4 tsp. Vanilla extract
1/8 tsp. Cinnamon
1/8 tsp. Coconut extract

Recipe Directions for Roasted Pineapple

  1. Skin the pineapple and cut in half.

  2. Mix the additional ingredients and pour into a hotel pan with the pineapple.

  3. Roast at 450 until pineapple is carmelized. Baste frequently.
