Roasted Pesto Chicken with Polenta

Recipe Ingredients for Roasted Pesto Chicken with Polenta

2 tbsp olive oil
0.54 kg chicken (about 1lb - portions-drumsticks, thighs)
2 tbsp pesto (green)
500 g polenta, ready-made cut into cubes
1 large courgette, roughly chopped
150 g tomatoes, roughly chopped

Recipe Directions for Roasted Pesto Chicken with Polenta

  1. Preheat the oven to 200C/fan180C/gas 6.

  2. Heat the olive oil in a heavy-based frying pan over a high heat.

  3. Add the chicken, in batches, and brown on all sides. Remove the pan from the heat and set the chicken aside on a plate.

  4. Mix 1 tablespoon of the pesto with the remaining cooking juices in the pan.

  5. Arrange the polenta and courgette in a roasting tin. Make spaces in between and add the browned chicken thighs.

  6. Drizzle with the pesto pan juices and roast in the oven for 35 minutes.

  7. Remove the tin from the oven and scatter with the tomatoes.

  8. Return to the oven and roast for a further 10 minutes.

  9. Drizzle the chicken and vegetables with the remaining pesto and divide between plates to serve.
