Recipe Ingredients for Roasted Peppers and Onions

4 large bell peppers (1 each orange, red, yellow, green), cut into bite-sized pieces
2 medium onions, cut into bite-sized pieces
2 tbsp olive oil
1 salt and pepper, to taste

Recipe Directions for Roasted Peppers and Onions

  1. Preheat the oven to 400 degrees.

  2. Toss the veggies with the olive oil. Add salt and pepper to taste.

  3. Spread mixture in shallow baking dish, and bake for approximately 35 minutes, until edges are brown and veggies are tender.
