3 eggplant, sliced
25 g parmasan cheese

  1. chop vegs

  2. layer onions, eggplant, peppers, and top with tomatoes with sprinkling of peppers and basil

  3. top with grated cheese

  4. roast in oven for 30-45 minutes until cooked.
