Recipe Ingredients for Roasted Pepper Spinach Mashed Potatoes

6 potato small (1-3/4" to 2-1/4" dia) Potatoes, Red, Flesh And Skin
1 cup, strips Peppers, Sweet, Red
2 cup Spinach
0.5 cup Fat Free Cheese
1.5 cup Milk, Nonfat, Fluid
1 tsp Garlic

Recipe Directions for Roasted Pepper Spinach Mashed Potatoes

  1. Roast one red pepper, let cool, peel and seed

  2. Puree pepper with 2 cups of raw spinach and 1 teaspoon fresh garlic

  3. Boil 6 potatoes, drain, return to medium heat

  4. Mash with whisk or potato masher while adding the milk, cheese, and pureed mixture

  5. Add salt and pepper to taste
